Some extra configuration options are available in dconf (under apps/florence). You can modify configuration parameters from dconf-editor. Each configuration element has a detailed description available.
It is possible to create your own keyboard layout if those available by default are not suitable for your needs.
An editor is available in the git repository of Florence, although it is not suitable for release yet. It is not very stable and not documented yet but you can still try it. Fetch it with this command:
$git clone git://git.code.sf.net/p/florence/code/editor florence-editor
Then you can launch the editor with this command:
$python florence-editor/editor.py
